What’s for Dinner … Weekly Meatless Meal Planning

Now that the warmer weather is here in the Northeast, we are wanting lighter fare for dinner.

And the vegan thing, hasn’t exactly stuck around these days … I am still almost vegan, but I have been enjoying some cheeses. So this has opened up more options for meals for me. And added a few pounds around the waist. 😦

I really wish I still had the willpower to knock it out completely, but I do feel more American enjoying pizza and parmesan. Just sayin’.

So here is what Pinterest has inspired me to plan for this coming week’s meals. We have some skillet recipes, a pasta dish, and a big chunky salad to name a few. Hope you get some ideas from these as well. If you try anything let me know how you like (or don’t like it).

What’s for Dinner … Weekly Meatless Meal Planning

I love making lists. But there is one list that I do every week, that I really dread.

It’s the weekly grocery shopping list. << insert groan>>

Constantly having to come up with new dinner ideas is not always fun when life is busy. There’s also the fact that we have lots of different types of eaters in our home … we have a meat eater, a vegan and 2 vegetarians. So, as you can imagine, it is a bit of a challenge to please everyone.

With today’s awareness of health & nutrition and food related diseases & allergies … I’m betting many of you can relate?

Combine the challenge of pleasing everyone’s dietary needs with Spring Sport Season, which basically means I have been running around an awful lot in the late afternoon/early evenings to get the kids to and from all their after school activities, and you have a recipe for complete lack of time being on my side when it comes to dinner preparations.

So I am always on the hunt for quick, easy but healthy dinner options that are adaptable to our varied needs.

I love that all of these meals can be catered to my families individual eating needs. For meat eaters, simply grill some chicken on Sunday. Slice, store in the refrigerator and add to a dish as needed through out the week. For dishes with cheese, for the vegetarian cheese-lovers, keep one side of the skillet cheese-free for the vegan eaters.

It’s easy to please many different dietary needs with these dishes. It’s easy to add in a bit of meat & change up the white rice with brown rice or quinoa.
